It seems everyone likes when I post recipes–they’re probably one of the more interesting things I post. B/c its pretty obvious that I cannot control my children since R thinks that its best to watch TV from on TOP of the entertainment center–hanging over the edge. yeah–he was naked too.
So, after living in high altitude for a number of years, I feel that I’ve got a pretty good handle of how to tweak my recipes. Not that i’m an expert–because I am NOT an expert on ANYTHING–do I need to just add that disclaimer to everything I do/say? Anyways, I have my Aunt Ina’s recipe for Chocolate Chip cookies, and I’ve tweaked it a bit and they are fantastic!!
Of course now that I’m following Tirsa’s lead and trying to eat sensibly I can’t eat them for all 8 meals a day. But I’m sure my children would appreciate them if they lasted longer.
Aunt Ina’s Chocolate Chip Cookies
½ c butter ½ c shortening (butter flavor)
2 eggs 1 t vanilla
¾ c brown sugar ¾ c white sugar
1 t baking soda 1 t salt
3 c flour 12 oz. chocolate chips
Preaheat oven to 375 F.
Mix flour, salt & soda; set aside
In large bowl cream butter, shortening & sugars until light and fluffy.
Beat in vanilla & eggs. Gradually add flour mixture & chocolate chips.
Scoop by spoonful onto greased cookie sheet.
Bake 8-10 minutes
Once all usable dough is gone—set mixing bowl on table and let children swarm over it.
Sample a few cookies straight out of the oven to test for ‘done-ness’.
*Do this w/your back turned to the hungry creatures on the table lest they see you and want some too—b/c you CAN’T give them scalding hot chocolate—that’s just not responsible!

Gotta love a good chocolate chip cookie recipe. Ok. I even love bad chocolate chip cookie recipes, but this one looks YUMMY! Afterall, one of your kiddos put down the marshmallow shooter for a sample… Gotta be good!
